To many Key Biscayners, SALT Waterfront Restaurant provides a escape just over Bear Cut Bridge, with its relaxing waterfront views, casual environment and inviting food.
Even though SALT’s roots are that of a school cafeteria, the restaurant is open to Key Biscayne residents. Located within UM’s RSMAS, SALT is a great option for lunch or an after work beverage. They offer affordably priced daily lunch specials, served at SALT’s deck overlooking Biscayne Bay.
With the opening of SALT Waterfront Restaurant in January 2014, a dream came true for Aaron Freedman, also the owner of Sidewalk Salads in Miami. In 2014 Aaron took on the extra adventure of running his own restaurant/bar; SALT.

AF. Virginia Beach, Virginia
IN. Where do you live now?
IN. How did you get your start in the culinary industry?
AF. We started 20 years ago, believe it or not, selling salads and pasta in downtown streets with a cart. Then we branched out to catering and from there we opened Sidewalk Salads in Miami. This place was opened strictly as a school cafeteria, but 5 years ago we took it over, changed the name and redid the concept.
IN. What is your “secret to success” in your profession?
AF. Give your best to everything you do, from the mundane daily task we all do to a big event; pay attention to the smallest of detail.
IN. What’s your proudest moment in your career?
AF. Every time we exceed our customers’ expectations. We receive quite a few thank you letters from satisfied patrons.
IN. Any funny or embarrassing stories you can share?
AF. Ours is a family business and my kids are always hanging around. Recently my 2 year old son was in the restaurant and one of our customers told me how cute my grandson was! I also have a 12 year old daughter.
IN. What do you love most about your career?
AF. The variety. We are always doing different type parties and holding fundraisers for the island, even graduation parties. Never a dull moment. And we also try to incorporate fun into everything we do.
IN. If you had to choose one meal, what would it be?
AF. A perfectly cooked baby back rib, or a great ribeye steak.
IN. If you had to make a dish for yourself, what would it be?
AF. Honesty aside, I’m really good around the grill and love grilling. Also prepare a delicious smoked salmon.
IN. What is your favorite junk food?
AF. Mint chocolate chip ice cream. Also partial to a good IPA beer.
IN. What do you like to do in your free time?
AF. I’m a biker, love the freedom. Also love to work around the yard and throw the frisbee around with my family.
IN. What’s your favorite part about working in Key Biscayne?
AF. After that beautiful drive into the island, always get to work in a great mood. There is also a lot to do in the island.
IN. What’s your advice for someone just starting in your profession?
AF. The beginning is always hard. When we started, I did not yet have a family and was able to dedicate a lot of extra time to get the business going, but above all else, nothing guarantees success more than a strong focus on succeeding and do not do it solely for the money. That will come with success and hard work.
