Three restaurants. A lounge with live music three days a week. A cafeteria and an ice cream shop, endless room service orders and a host of Key Biscayners who make “the Ritz” the island’s food & entertainment social hub. Add hundreds of employees and you wonder how it all comes together?
That responsibility falls exclusively on Rosa Tamajon, a high-energy native of Honduras and the Ritz Carlton’s Director of Food and Beverage. She’s responsible for all the dining options at the Ritz property and while her duties have her spending a lot time in her office, Rosa is well known to many locals and even with a hectic schedule, on the weekends she is usually found in the different restaurants on the property spending time with the guests and her team.
IN. How did you get your start in the hospitality industry?
RT. A friend of mine was working at a hotel in the city I grew up in, Elizabeth, New Jersey. He used to share stories of how much fun he used to have with his banquet team. I decided to join the company and started as banquet server.
IN. Is there a secret to your success?
RT. Be passionate in what you do, ignite the same feeling in others to ensure they understand the purpose of success. When you love what you do, people want to join you in your journey.

RT. To join the Ritz Carlton Company
IN. What do you love most about your career?
RT. Creating the right environment for our guests to enjoy our resort and to see families coming back year over year and continue creating memories that last for life.
IN. If you had to choose one meal, what would it be?
RT. Spanish tapas with great company and a glass of wine.
IN. If you are preparing a dish for yourself, what would it be?
RT. My Grandmother’s favorite Sunday dish; Tapado, a seafood stew made with coconut milk, Caribbean spices and a splash of curry.

RT. Fried Chicken
IN. What do you like to do in your free time?
RT. Spend time with my husband, enjoying our favorite town of Sarasota.
IN. What’s your favorite part about working in Key Biscayne?
RT. Being part of this beautiful Key Biscayne family, and to see the commitments that each one of our ladies and gentlemen have when taking care of our guests.
IN. What would people be surprised to know about you?
RT. I love canaries, I have few at home. I enjoy waking up and hear their beautiful sounds in the morning.
IN. What’s your advice for someone just starting in the industry?
RT. Leave your fingerprint on everything you do. You must leave evidence that you made a difference.
